Mary Daly & Associates – Keeping Food Safe in Munster

04 March 2010

With increasingly demanding standards and legislation within the food industry, it is a huge challenge for all operators to keep their staff fully up to date and compliant with regard to food safety.  Mary Daly & Associates have been 'keeping food safe' by providing training courses in food safety to hundreds of operators throughout Cork and Munster for many years. These are the only public certified food safety courses running in Cork, and are held at The Vienna Woods Hotel.

The courses are certified by the Environmental Health Officers Association (EHO) and also the National Hygiene Partnership (NHP). Legal compliance requires those in the industry not only to be trained in food safety, but also to have an understanding of HACCP (Hazard Analysis and Critical Control Point). Those attending Mary's courses also have the opportunity to become licensed Food Safety Trainers in their own work places, thus furthering their own careers.

The courses are also of benefit to those in the retail industry in order to meet the criteria of the "Hygiene Mark". Nursing Home managers required to implement the standards set by the HIQA (Health Information and Quality Authority) will also benefit from the courses.

For ten years, food consultants Mary Daly & Associates have been building a reputation within the food industry in Ireland. The firm is the preferred Food Safety Consultancy of Good Food Ireland and the Association of Craft Butchers in Ireland and the reputation has been cemented by the fact that no client has ever had a product liability claim or any enforcement against them.

Janice Hegener, one of Mary Daly's former graduates maintains "As a graduate with a Higher Diploma in Culinary Arts, I was looking for an opportunity to enhance my qualification. I felt I wanted a concise programme, specific to my profession. The "Management of Food Hygiene" course provided the information I needed to understand the legislative requirements of the food sector. Most importantly it ensured the learner gained the knowledge necessary to ensure compliance. I can honestly say that I have used the skills I gained every single day. These qualifications have assisted my progression working as a trainer in an industry and job I truly enjoy."

Mary Daly is a certified Food Safety Trainer licensed to Fetac,FAS, EHOA and the National Hygiene Partnership. A UCC graduate (qualified teacher), she spent 21 years in the Defence Forces during which time she studied a post graduate in Catering Management, implementing standards in the army in Ireland and overseas.
