Sumptuous Sushi and other delights served in the New Gardens at Fernhill House Hotel

Fernhill House Hotel in Clonakilty is enjoying whole new way of entertaining due to the recent launch of the Gardens and permanent Garden Marquee allowing guests to enjoy Champagne and Canapés in the garden party area. Head Chef Dee Rettali has taken the traditional canapé and stamped it with her own contemporary twist while using local delights. Partygoers can enjoy a menu which includes Sushi, Union Hall Smoked Salmon & Crème Fraiche Blinis, Ardagh Castle Goat's Cheese and Mini Tomato and Gubbeen cheese pizzettes to tempt taste buds.

Dee is also famous for her desserts having trained with Justin de Blank at the Waterside Restaurant in the Barbican in London. She then had an apprenticeship with Irene Mbarek at the Pudding club, which sold to the Ritz & the Savoy. Following this she opened her own patisserie "Patisserie Organics" and was responsible for designing the first completely organic wedding cake in the UK even making a birthday cake for Prince Charles.
